Amazing Dinner of Pork Chops with Apple Relish

I know I said I would post workouts this week, but I over did it on Monday, and with my Fibromyalgia that caused me to pretty much be down and out the past few days. So instead of workouts I am giving you an amazing dinner that is pretty simple to make.

Since I am trying to eat healthier I have been open to new ideas with food. Monday afternoon as I was trying to figure out what to cook for dinner I kept thinking pork chops (now I know what you are going to say, “you said healthier and pork chops aren’t that healthy”).  I also knew I wanted apples with them. I came up with the idea to make an apple relish out of Granny Smith Apples, Golden Delicious Apples, lime zest, lime & lemon juice, and cilantro. This really kicked up the pork chops.

For the chops themselves I knew I wanted garlic (my family loves anything garlic), so I went with a lemon garlic marinade on them. They were amazing.

I always cook my chops under the broiler for about 15 minutes on each side. It is a lot easier for me that way I can work on the sides while the chops cook and not have to worry about them burning or not being cooked all the way.

As for the rest of the meal I decided on brown rice with quinoa and a salad of mixed greens…..My only fear was since I came up with this meal in my head was that my family wouldn’t eat it. I served the first plate to minion #3 since he is the pickiest eater, and he loved it! He even asked for 2nds. I believe that this is going to be a new one to add to the meal plan!

Pumpkin Chocolate Chip Cookies!

One of my favorite things to do with my kids is bake. I have always loved making cookies since I was little so it is a tradition I have passed on to my kids. I love baking so much that my first job was in my aunt’s bakery.

The other weekend Minion #3 wanted to bake with me and I could not say no. I wish I had just captured a photo of him thinking what kind of cookies he wanted to bake. It was so cute to see him deep in thought and scratching his chin. He decided on Pumpkin Chocolate Chip Cookies. I had never seen a recipe for them so I hit up Pinterest and found the perfect one. First thing I always do is gather all my ingredients and get them ready.

First you combine pumpkin, sugar, vegetable oil, and egg in a medium sized bowl.

In a separate bowl mix together the flour, baking powder, ground cinnamon, and salt.

Next dissolve the baking soda in the milk

Pour the milk mixture into the pumpkin mixture and stir in the flour mixture. Once combined stir in the vanilla and chocolate chips. Drop by the spoonful onto a greased cookie sheet.

Bake at 350 degrees F for 10 minutes or until lightly golden brown. Once done remove from oven and allow to cool on the pan for 5 minutes. After 5 minutes remove to cooling rack to allow to cool completely.

I have to say I was pleased with how these turned out since I never imagined putting pumpkin in chocolate chip cookies. I will add them to my fall baking list next year. Right now I am working on my Holiday Baking list!
